Service told me that the book calls for six hours worth of work to change an oil pan gasket on an Aztek. Does this sound about right ?

I don't have my labor time guide handy, but I suspect that is about right.  It is not a simple task.  At the very least you have to be able to lift the engine up off its mounts to be able to drop the pan.  However, the confines of that area make it really tight to get any tools in there.  So they may weigh that as opposed to just dropping the cradle lifting the engine, putting it on a stand and flipping it over for pan removal.

If you have a pan gasket leak and the gasket shows no obvious sign of a failure, make sure they check the block mating surface for flatness, the flatness of the pan and making sure that the bolts are properly torqued.  I suppose it is possible that the bolts could have backed themselves out slightly over time.  Be careful with that knowledge though.  That pan is aluminum, those bolts are not heavily torqued and have a specific tightening sequence to avoid warping the pan.
