Is there any reason this should not/cannot be done on my AWD 'Tek?

I wouldn't as there is almost a 6% difference in overall diameter size. Many recommend a change no more than 3% for safety reasons
it would affect your speedo and most likely the computers that affect the drivetrain and awd system

You could talk it over with a tire dealer though. Maybe a wider tire with a 60 aspect. Like Drex said you wanna keep overall diameter roughly the same but that doesn't mean that in doing so, you couldn't get more rubber on the road.

Actually, the only reason I was interested is beacuse I can get a set of 215/60R16s very cheaply =)
